Freeze drying may seem like a modern invention, but its origins actually trace back to ancient times. Long before electricity or advanced machinery, early civilizations stumbled upon basic freeze-drying methods. The Incas of the Andes Mountains were among the first to use a form of freeze drying called “chuño.” They left potatoes outside in the cold mountain air overnight to freeze, then let the sun dry them out during the day. This freeze-thaw process removed moisture from the potatoes, allowing them to be stored for long periods without spoiling.
