Common Freeze Dryer Operator Mistakes

Many freeze drying problems come from repeat mistakes. Overloading trays is one of the biggest. Thick piles trap moisture and cause uneven drying. Another issue is inconsistent food thickness, which makes some pieces finish while others stay wet. Skipping pump maintenance can create weak vacuum and slow drying. Packaging delays are also common. Freeze-dried food absorbs moisture quickly from room air. If you leave it out too long, it can soften. Finally, opening the door during a run adds time because the machine must rebuild vacuum. Good habits create consistent results.
