How to Tell When Freeze-Dried Food Is Done

The most important step before packaging is confirming the food is fully dry. If moisture remains, shelf life can drop and quality problems can appear later. Use a break test. Take a piece from the thickest area, break it, and check the center. Fully dried food should snap and feel dry through the middle. If the center is cool, leathery, or soft, add more dry time. Check texture. Many foods become crisp and lightweight. Dense meals should crumble or break cleanly when fully dry. When in doubt, extend drying time. Extra drying is usually safer than under-drying. Once food passes the tests, package quickly to prevent moisture from re-entering from room air.
